I tried to make a batch of white chicken chili for the first time. I made a sofrito of onion, garlic, jalapeño and poblanos with a bit of celery. Blended it up and browned it in the Dutch oven. I added shredded chicken breast that was made in the instapot with seasoning and a cup of chicken broth. Added two cans of green chilis (hot hatch and smoked greens) two can of cannelloni beans. It tasted fine, but was definitely a soup and not a chili. In the future I would definitely roast the onions and peppers beforehand for the sofrito, but I’m lacking that thickness that happens with regular chili Do I do something wrong with my ratios or is there a secret for thickening this up into a chili? I was hoping the beans would do some work in this department but they did not.
