I acquired 108 lbs of this “hi-gluten pizza flour” intended for use at Little Caesars Pizza. I do not see a gluten content on the bag. What is this ideal for aside from pizza, pizza? I generally mill my own wheat and use just plain Jane Costco AP flour otherwise. submitted
