Egg Lush Cafe, the Korean style cafe near downtown Colorado Springs, specializes in a next-level egg sandwich — This week on 2-Minute Review, we’re diving in. This egg sandwich is no ordinary egg sandwich. Served with fluffy scrambled eggs, spicy mayo and their special lush mayo, all on toasted brioche, this mouthwatering sandwich is popular in Korea for good reason. Not to mention they are so stuffed full that the sandwiches come bound in a cardboard carrier for easier handling. We got the bulgogi sandwich and ham & cheese sandwich, and our expectations were exceeded. The bulgogi was tender and juicy, and the eggs were fluffy and fresh. Not runny, not dry, and mixed with the bulgogi, Korean shredded ribeye, and their special, creamy lush sauce, it all comes together as, dare I say, the perfect egg sandwich. The ham and cheese was well balanced despite the generous portion of eggs. The eggs were light and fluffy, and the bread was toasted to perfection.…
