New head chef at Maz explores Peruvian food through a Japanese lens

Since taking over Maz last month, chef Yuya Nakamura has been gradually introducing more Japanese influences to the restaurant's innovative Peruvian cuisine. | MAZ Ever since it opened in Tokyo in 2022, Maz — the sibling restaurant of culinary wizard Virgilio Martinez’s famed Central (voted the best restaurant at the World’s 50 Best Restaurants 2023) in Lima, Peru — has been making waves with its innovative Peruvian cuisine.  Dishes like uni (sea urchin) with creamy foam made from scallop roe, and wagyu aged and smoked with Peruvian herbs wowed diners with their harmonious blend of Peruvian and Japanese culinary elements. Food critics love Maz, too. It debuted with two Michelin stars in the 2024 edition of Tokyo’s Michelin Guide. At this year’s Asia’s 50 Best Restaurants awards, it was ranked 28th, continuing its steady climb up the list.
