Recipe is from America’s Test Kitchen, but I double the serrano peppers and add chili powder to give it more heat. • 1 yellow onion, diced • 4 cloves garlic, minced • 1 tbsp grated fresh ginger • 2 serrano peppers, stemmed, seeded & minced • 2 tbsp tomato paste • 4 tsp garam masala • 3 tsp chili powder • 2 tsp sugar • 3 tbsp vegetable oil • 1/2 tsp salt • 2 lbs boneless skinless chicken breasts, cubed • 1 14.5 oz can diced tomatoes, drained • 3/4 cup whole milk plain yogurt • cilantro for serving Combine everything except for the chicken, diced tomatoes, yogurt, and cilantro in a microwave safe bowl and microwave for 4-5 minutes, stirring occasionally, until onions are softened.
