At busy food cart lots across Bend, meals usually come with single use utensils, plates and cups, items that are used in minutes then destined to sit in landfills for years or decades to come. A new initiative aims to change that by replacing single-use serviceware with a citywide system of reusable dishes, supported by a centralized washing operation that organizers say could be the first of its kind. “I have yet to find a similar system nationwide, so we’re breaking some new ground,” said Kavi Chokshi, Rethink Waste program manager at the Environmental Center, the non-profit that is spearheading the project. If the project moves forward, the “wash hub” will clean and redistribute reusable plates, bowls, cups and utensils used at food cart pods and large events. Supporters say the system could dramatically reduce waste while addressing a key barrier that has long prevented businesses from switching away from disposables.…
