I wanted to recreate the flavors of Thai mango sticky rice in a bar dessert, so I experimented with a chewy coconut mochi base topped with a mango pudding layer. The base is made with glutinous rice flour, coconut milk, eggs, sugar, and a little oil. The top layer is strained mango puree set with gelatin.
