I just started smoking a few months ago, and its been very fun, I use a pellet smoker, and im happy with the results, in all the varying results I've gotten, I've noticed something, which I thought was fine, until I saw someone describe it as jerky-like, and that made me think I should try to fix it. To be clear the jerky like section of the brisket is the bottom part; you can see it when I hold the point. I'm not sure if it dries easily with everyone or maybe because I rest it in the oven, but it's become tough to cut, and stringy.
