Cleaned up my old Pecos a couple weeks ago. It had been neglected for a while. Here are some pics from my first big cook in a while. Brisket needs some work (i pulled it too early and didnt rest it long enough), but overall it could have gone much worse. Not a bad way to spend the day. Aimed for 275 using pecan and post oak.
