“I’m mad so I made…” Strawberry Lemon cupcakes I had a terrible weekend and whenever I am seething and feeling sorry for myself I am prone to intense cleaning and cooking to distract myself. So today I made pissed-off strawberry lemon cupcakes! Must be something about the red. 😋 I used this recipe: https://www.food.com/recipe/simple-vanilla-cupcakes-178370? to make the batter. I did not use vanilla extract. Then, I microwaved and mashed frozen strawberries (about 1 1/2 cups?), folded half of them into the batter before putting into the parchment-paper lined cups. Then I spooned the other half of the berries onto the tops of the raw batter and swirled it with a toothpick. I baked for 18 minutes at 375°. Then topped with canned lemon frosting and pink sugar pearls. Stuff I had laying around unused.
