"The big 'heart of the home' kitchens, preferably with pantries, are incredibly hard to find these days, except in really expensive homes where they probably don't get used. Most houses built in recent decades have pathetic, little kitchens with no space to work or store things. They're almost like an afterthought. Worst of all, there's the open-concept kitchen that's just a little nook with the appliances, a few cabinets, and maybe an island in the corner of a huge room. I think between wanting to be healthy and the high cost of living, more people want to cook at home, do meal prep, and buy in bulk. The way houses are set up, that's very challenging."
