I finally broke my dry spell and bagged a tom this morning woohoo. The last time I cooked one I injected the breast, legs and thighs with a marinade and let set for a while before I smoked it. The outcome was 50/50. The breast was amazing but the legs and thighs were like chewing on leather.

Any one have tips on how to keep the legs and thighs from getting so tough?
