IT (cybersecurity) portfolio - Impact or Variety?

Hey everyone,
​I'm currently reviewing my portfolio strategy and I'd love some feedback from hiring managers and senior (junior too) devs.

​Solo the Dilemma is: Is it better to have one or two robust projects that are actually used by people worldwide (like solving real-world problems), or a dozen mini-projects that showcase a wider range of technologies (e.g., a React app, a Python automation script, a Go backend)?

I've been focusing on an interesting Google Chrome extension, and I'm really struggling with it, but that's actually a good thing - it means I'm learning and all that. However, I worry that an employer might see a smaller number of repos and think my "tech width" is too narrow.
