Yves here. On the one hand, in the US among the affluenza, the pursuit of healthy food too often rises to the level of fetishization and neurosis. For instance, I know of places where you can not only go pick the grass-fed cow that will later be slaughtered for you, but even choose which type of grass it will eat. And I have seen too many health fads come and go. Juicing was A Thing for a while but fell out of favor because juicing removes fiber, which has nutrient value. But on the other hand, the problem with diet and nutrition generally is that it is too hard and costly to do proper studies, as in long-term and with controls. And a big issue is accurate reporting. I would trust nurses and medical professionals to keep accurate diet logs over time. The general public? Not so much. So they wind up relying often on correlations when the correlation may simply be spurious or there may be an explanatory factor that would change the interpretation.…
