Hi - I’m looking at a portable cooktop for large pots for better precision (I’d like to start homebrewing/cheesemaking and eventually potentially commercialize some products).
I only have space for some of this in my basement, which does not have a stove. Is it generally considered fine to use a portable cooktop (like a duxtop) for some of these larger pots as opposed to a larger burner that you might see on brew/cheese supply sites? I assume yes as it wouldn’t be much different (besides induction vs gas) than my home stove but wanted to check.
