Jasmine Andrew, owner of White Lotus Café and Bakery in Colorado Springs, is stepping up her bakery game. Since opening her Thai-fusion café in November, she’s expanded beyond a handful of Asian-inspired sweets to include cakes, croissants and Japanese-style Shio pan butter rolls. Those rolls are already a hit: pillowy dough wrapped around a cube of French butter that melts as it bakes, creating a crisp, buttery base. A sprinkle of Shio (the translation for salt in Japanese) balances the richness. Andrew’s ingredient standards slowed the rollout. “I tried several butters and ready-made laminated products, but none of them were the flavor I was looking for,” she said. Now she uses Isigny Ste Mère Beurre de Tourage. Croissants, a three-day process, are reserved for weekends at the bakery, 13141 Bass Pro Drive. “I’m trying to find someone to train to help me,” she added.
