Im new to deep frying and have some oil use questions I cant find answers to. Chinese cuisine. I dont normally do much cooking with large amounts of oil but lately I've been wanting to try making some hot chili oil and some crispy mala beef. Both dishes turned out well but im not sure what to do with the left over oil. I know you can strain deep fryer oil and store it for a while. But since I've infused the oil with onion and garlic, does that change anything? And could I have killed 2 brids with one stone if I had cooked the mala beef before making the hot chili oil? Questions: Does infused oil store the same way as non infused oil? I guess all deep fryer oil gets infused each time its used so Im guessing the answer is yes. For my hot chili oil recipe, could I have used the same oil that was used to fry my beef for the mala beef dish? After frying the beef, most of the oil is poured out before adding any additional spices to finish the dish.…
