Hi there, everyone—hoping I might rely on the experience from this community for some help. Later this week I'll be making a meal for some work colleagues; the meal is centered around an international guest who is currently visiting. As the host, I'll be doing the cooking—but I'm not a very skilled cook. In addition, there are a couple of restrictions in our group that are limiting the menu options: we have one lacto-ovo vegetarian, and one person with allergies to both tomatoes and eggplant (the tomato allergy is throwing me for a loop, because the basic cooking skills I do have mostly revolve around things that contain tomatoes or tomato sauces).

So my question: any suggestions for fairly simple meals that can be scaled up for a group of ten and are both 1) vegetarian and 2) free of tomato and eggplant?
