My British wife thinks a "yank" cannot make authentic British Fish and Chips...challenge accepted, challenge complete!

Ingredients

The Fish

  • 14 to 16 oz Atlantic cod, center-cut loins, 1 to 1.5 inches thick, cut into two 7 to 8 oz portions
  • ½ cup plain flour, for dredging
  • Fine sea salt

The Chips

  • 2 large russet potatoes
  • Fine sea salt

The Frying Medium

  • 1 gallon refined groundnut (peanut) oil, or beef tallow, or a 50/50 blend

The Batter

  • ¾ cup plain all-purpose flour
  • ¼ cup cornstarch or rice flour
  • 1½ tsp baking powder
  • 1 tsp fine sea salt
  • ¾ cup ice-cold British ale (London Pride or ESB)
  • 2 tbsp 80-proof vodka

To Serve

  • Malt vinegar in a small spray bottle
  • Tartar sauce and lemon wedges
