My British wife thinks a "yank" cannot make authentic British Fish and Chips...challenge accepted, challenge complete!

Ingredients
The Fish
- 14 to 16 oz Atlantic cod, center-cut loins, 1 to 1.5 inches thick, cut into two 7 to 8 oz portions
- ½ cup plain flour, for dredging
- Fine sea salt
The Chips
- 2 large russet potatoes
- Fine sea salt
The Frying Medium
- 1 gallon refined groundnut (peanut) oil, or beef tallow, or a 50/50 blend
The Batter
- ¾ cup plain all-purpose flour
- ¼ cup cornstarch or rice flour
- 1½ tsp baking powder
- 1 tsp fine sea salt
- ¾ cup ice-cold British ale (London Pride or ESB)
- 2 tbsp 80-proof vodka
To Serve
- Malt vinegar in a small spray bottle
- Tartar sauce and lemon wedges
